50% Pinot Noir 30% Chardonnay 19% Pinot Meunière and interestingly 1 % Pinot Gris. Extremely fine mousse. On the nose and palate Citrus and Granny Smith apple - very refreshing. Chalky soils. Many tasters would pick this as French in a blind tasting. The trouble is by the time this gets to Australia the price is similar to an average NV Champagne so to the average buyer the Champagne is the safe bet but make no mistake these are first class Sparklers. — 3 years ago

Thanksgiving wine number 1. Sick and tired of waiting for people to show, And a great beverage in the glass while decanting the Cimarossa. Tart lemongrass, medium bodied white wine on the nose and start of the palate. Favorite of the group, as this one might have survived about 15 minutes, forcing me to open up the Hattingley a bit earlier than expected. Good acidity on this wine from start to finish.
