Amber tinged head atop an amber, auburn clarity. Light bananas foster turns up the rum-sage on the nose, then brings peanut oil, and allspice. Peanut brittle and dark brown sugar nestle inside rye toast, brioche and a bittering savory whisper. Pleasant interplay of malt and bitter, but always with a slightly honeyed finish.

Orange amber, orange blossom and orange taste for orange season. White-beige head with vinous lacing. Blood orange, plums, caramel nougat, smells of grapefruit on the grill, lemons too. Belgian malt echoes, nutritional yeast, candied orange, orange zest, marmalade, caramel and carrot bread. Easy drinker, but depth is there, and delightful interplay of sweet and citrus! Really thoughtful ipa. .

Kwak Malt

Topaz with heavenly streamers stretching for perfection. Creamy head of structured perfection in terms of density and longevity. Perfect sheet of fog lacing falls like a slo-mo curtain to reveal layer two of mountain snows reflecting moonlight. Nose of bananas foster in all its blazing brandy and it’s caramelized olfactory topography; a malt image in sensory sepia to match the mountainscape. Nutmeg, cola and pecan dessert vies with baklava. The palate is a revelation in balance. Cellar Reserve Old Stock Ale 2016

Jumping spider eye bubbles mass in a parabola foam while smaller bubble sheens fill the bursting absences, until the whole becomes an espresso foam, and equally oiled. Unction lacings lean Hebraic but ultimately are the dream fonts writ by the hand of G-d. Mene Mene Tekel Parsin they seem to say before fluttering away as constellations on a starling’s back. Fair warning as this is a heavy purse to carry. Six years in and taking stock. Figs, dates, treacle, raisins, carob, caramel, vanilla bean, sweet potato casserole, bacon fat, mincemeat. Rich on the palate with milk chocolate, molasses, Turkish coffee, gingerbread, candied date, and espresso-tobacco finish. Gloriously integrated and complex complexions.

Deepest red amber echoes eponymously, chaos ensuing in its lofty-top curtain drop of ocean foam encroaching and Cyprus knee lacing. Pine nettle, maple flower, bruised banana and overripe pineapple. Cinnamon toast and caramelizing Vidalia onion aromas. There is an ocean brine and orange blossom back breeze. Heavier mouthfeel accents tastes of orange-honey, marmalade, resinous malts, bay leaf, oregano and nutmeg leading to grapefruit and kumquat. Ruthless Rye India Pale Ale

Cloudy reddish-amber pops cappuccino foam fleecily. Slippery lacing coats and rends to mustachios. Cracked pepper nose shows rye bread, malty bits and plantain. Pepper and rye conspire for dominance on the palate, aggressive posturing that leads to diplomacy amidst cigars. Notes of roasted pecan and burnt sugar. Cinnamon bark, clove and allspice all spectate, but rarely enter the fray. Lemon pepper emerges victorious.

Imperial Stout

Wow, coffee bean colored head turns lighter cream; from biscotto to sponge texture to satin. Garden of the gods lacing. Espresso, mocha, dark chocolate, burnt brittle, and toffee nose. Rich and complex and focused with deft straddle of bitter and sweet, creamy and dry. Chocolate assumes a caramel droplet, while honey comes to mind with floral notes. Ribbons of Turkish coffee, and plenty of oak and char compete for the remainder. Big, sinewy, chewy and earthy, just wrapped in sumptuous sweets. Awesome! .

Imperial Stout Beer

Black with burnt umber highlights. Low and creamy head springs with bubbles combining to undercut its great form. Fireworks lacing slow falls to leopard spots. Espresso and baker’s chocolate nose boasts licorice and chicory, campfire notes and vanilla. Palate shows none of the sweet elements of the nose initially. Instead, pipe tobacco and unsweetened bitter chocolate, the chicory and burnt toast prevail; a burnt tips taste lingering. Baked pecan, dark caramel, black pepper, and ethiopean coffee, with black chewing tobacco and vanilla bean complete the circuit. Power and restraint, in this lovely offering.
