Paul Sauer Cabernet Sauvignon Blend 2016

Medium deep , ruby centre and ruby rim . Dark blackberry , spicy tobacco , earthy currants , coffee . On the palate quite dark fruit focused , blackcurrant , blackberry , dark cherry . With time in the glass this seems to show a bit more of the earthy , tobacco notes also present on the nose. Quite high fresh acidity , slightly gritty tannins , quite good tobacco tinged finish . This is showing well now but will age well for a further decade — 16 days ago

Domaine de Thalabert Crozes-Hermitage Syrah 2015

From Magnum. Opened about an hour before dinner; enjoyed over the course of two days. Best after a couple of hours. The 2015 “Domaine de Thalabert”pours a deep ruby/purple color with a near opaque core; medium+ viscosity with significant staining of tears and signs of sediment. On the nose, the wine is developing with notes of ripe and desiccated fruit: blueberries, figs, lavender, Kalamata olive, leather, coffee, Bacon fat, spices, and organic earth. On the palate, the wine is dry with medium tannin and medium acid. Confirming the notes from the nose. The finish is medium. This was pretty shy and awkward early but after significant air, it came alive. Lots of life left. Drink now through 2035. — 11 days ago

Le Clos Guillot Chinon Cabernet Franc 2020

Opened yesterday. Quite bretty and reductive upon opening, but the funkiness has blown away now. The nose shows cola, dark cherry, green pepper bell, and black pepper. That cola note is something I usually get with natural wines from loire and beaujolais. The palate is yummy with a great acid drive, some superb cherry notes all along, some black pepper, some pomegranate touches, a bit of a drying layer in the rear that is quite peppery and a long fruity, joyfull finish that goes on for a while. It's not your typical extracted chinon. It's a modern, low intervention style that is delicious but needs time to settle. The anti-brett community out there might have a hard time with it 😅 but give it some time to breathe, and you will be rewarded.
Edit: it's even better 4 hours after. Delicious juice with some complex layers on top of it
