Ripe melon, Asian pear, mint and nuances of white smoke create an inviting bouquet. It’s round and elegant in feel, engulfing the palate in mineral-tinged orchard fruits and hints of chamomile. A salty flourish emerges through the finale, as notes of sour citrus and inner wet stone slowly fade. This is a total pleasure to taste. The NV Extra Brut Rosé Metodo Classico N.S. della Neve is captivating with a beguiling bouquet that leads with sweet tobacco, then transforms to show ripe peaches, chamomile and hints of raw almond. It’s silky-smooth with a fine bead of bubbles, as tension quickly mounts through a wave of saline-tinged acids and minerals that cut through with laser-like intensity. A salty flourish defines the finale, while the palate is left watering for more. This is intense on its own, but it would be dreamy with any number of rich, fatty or fried foods. The N.S. Della Neve is a Metodo classico-produced blend of 60% Nebbiolo and 40% Pinot Noir that finishes at just one gram per liter of residual sugar. Disgorgement date: February 28, 2022. The 2020 Rosé di Lulú is quite unique and perfumed in the glass, with a bouquet of Sour Patch melon, sweet spice and candied orange peels. It’s soft textured with wild inner floral tones complemented by hints of ginger, coming across more like an exotic herbal tea than wine. The result is actually quite pleasurable as this tapers off savory yet fresh with a lingering hint of spearmint. The Rosé di Lulú is a varietal Nero di Troia Rosato from Puglia.
