Honey, brewed green tea, chamomile, ripe yellow pineapple and mango, juicy apricot, medicinal notes/petrol, slightly white pepper, bread dough, marmalade, precise chalky minerality (though I think it’s grown on limestone/schist?). Piercing high acidity, finishes tart and citrusy. Long finish. 😋

At first I thought the wine was served too cold because the nose was almost non-existent. After 20 mins scents of apple skin stared to show up. Once I tasted the wine I realized the acid was acting like a Whac -A-Mole mallet. Every time the fruit tried to pop up it was whacked. The ingredients needed to be a solid wine is there it just needs time to unfold.

Beau chenin, nez complexe encore sur le fruit frais.
Bouchle droite équilibrée salivante

This would kill with oysters. A little bit of salinity and a ton of minerality. Grapefruit and lemon on the nose and palate. From our tasting at Domaine des Roche Neuve.
