I opened this a week ago for a paella party, had some of the bottle left in the frig. Even though some acidity has dropped, it still has enough nutty zing for a pre-dinner aperitif.

When one needs a "dry sherry" for mushroom barley soup, why skimp on quality? Especially when the recipe calls for ¼ cup...more for the chefs!
