That time steel wool and honeycomb had a love child. Red apple and chalky minerality piquant, essentially playing well together. Honeydew and lemon zest, lime blossom and sneaker rubber (New Balance, not Nike). Leesy. Less palate weight than I'd like, but with flavor so deliciously #CHENIN like, I can't really complain. #mineralityliveshere

This wine is certainly not for everyone. There is a phenolic bitterness that some might find off-putting. I tasted grapefruit pith, hard cheese, and lemon curd. That said, I really like it. But I love Chenin Blanc in all of its stylistic variations.

Sparkling Chenin Blanc is a special joy. More rich, round fruit than a champagne, still bright and fun but with more depth than either Prosecco or cava, to me.

Zero sugar. Pure Chenin shines through. Bubbles are light and provide gentle uplift. A 7 generation operation that's down to earth. Francois is happy his 30 year old son finally decided to go to wine school.
