I describe sakes of this type “like water”. It has a pleasant mouth feel, a slight sweetness to it, a finish that is there and then disappears in an instant. It’s there if you think about it but this has a weightless to it and clean, purity about it that makes you appreciate it more than one that is bold and brash. Great with the uni and served in a large wine glass, it was the favorite of the night. That said if this wasn’t towards the end and you had it first, I think you would miss its beauty. 2024-03-29 vintage so almost exactly a year old.
