This "white" wine shows itself traditionally orange, a pleasant coppery hue like a new penny or the right bite of salmon, upon opening. Flavor is smoky and herbaceous with a very light brine, the kiss of an ocean on a matted bed of rosemary and wood ash. Pairs well with food, standing up and holding its own without overpowering the palate; the body is light, to go well with vegetables cooked simply, and the flavor is strong enough to cut through and reset heartier fare. Do NOT chill, despite the end-of-summer allure of a cold rosé and the semblance here thereto; too cold, this rose grows thorns.
