Balanced, versatile food wine. Paired with a rosemary-heavy Roman chickpea/tomato stew. I always forget how dark this variety can be given how light bodied the wine is (onions took on a deep magenta/purple color during deglazing), making it basically the inverse of Nebbiolo. A rustic, guilty pleasure sort of wine (adored by popes and pornstars per Ian D’Agata’s notes): red vines and flat cherry coke (aka ripe cherries, raspberries, bruised Macintosh apple, vanilla, baking spices) and a hint of earth.
