Apr 29th, 2015Wow what a treat. We let it decant for an hour and then poured it back in to the bottle ant let is sit for 4 hours with no cork. Just amazing. The complexity is amazing and I feel like I can taste the terroir. It was very acidic at the beginning but that went away after we let it breathe and it was replaced with an amazing complex assortment of dry fruit, flowers, and that French funky dirt taste. Merry Christmas and cheers.
