Deep gold in the glass. This bottle was super reductive at first; but behind the pungent barnyard was lots of smoke and flint, and a seriously loaded palate of stony minerals and firm, just-ripe tropical-leaning fruits. So concentrated on the palate with dried salty yellow plums and a sweetness of ripe apples on the finish. Delicious. Definitely needed a decant though.

Checking back in and glad I did. Ocean water, lemon pannnacotta, transforms with time into a racey rock scrub and a golden glisten. Enjoyed w handmade cavatelli in tomato pep confit, clams, basil, a dash of brandy. Come sail away!
