The good folks at Buck’s T-4 in Big Sky, Montana pulled this off list suggestion for us after we talked about our wine preferences. It was perfect with the Elk chop. A bit gamey with a touch of pepper. It had brightness that comes from a cool climate, but it still managed depth and and loooong finish. I wish I could remember more, but that was several days ago. Absolutely delicious.
