Maybe my favorite bubbles outside Champagne, made in the classic Methode Champenoise. A thick nose of flinty smoke, almond, yeasty bread, and some gingerbread. The palate adds ripe lemon and lime, with clearly present acidity and limestone mineral backbone. My 3rd taste of this in the last year. #sparkling#cheninblanc#vouvray

Foreau 2007 Réserve Brut Vouvray greets the nose with flint and steel, limes leaves and lemon curd and tastes at every corner of one's head of saline seashells, taut skinned orchard fruit, lemon peels of no bitter pith and rises to a crescendo of dry candied lemon rinds if the sweetness of sugar we're but a ghost or memory and leaves us in a wake of oyster liqueur. This glows angelic as if back lit from within -at once calming and invigorating.
