Aug 21st, 2015We've decided this is a good food-pairing sparkling wine, probably not one we'd be inclined to sip on its own--it's got a yeasty toasty backbone with a hint of brown sugar and citrus. Not a big fan of the nose but the flavors paired well with our 3 year Vermont white cheddar and our cave-aged cheddar. As it warms up, the toasty notes become more prominent.
