Great focus, operating on a moderate wavelength. Not the most expansive but not a laser down the palate either. Golden apple, cured lemon, pecorino rind, salty brioche dough, crushed chalk and oyster shell. Briny and mineral across the back palate. Beautiful for the price!

Loved this pure Pinot Noir Champagne from #garagiste. It paired really well with bacon-wrapped Christmas pork loin, cranberry-cherry compote and creamy polenta. Dash of Dijon on the side. The bubbles perfectly balanced the grease, so I’m glad I didn’t go with a red.

Exceptional. Laser-focused Pinot Noir Champagne. Cutting acidity but the PN fruit also shines through here. 2014 vintage—disgorged October 2017.
