On perhaps the first gorgeous day of the year in NYC it felt appropriate to open a nice bottle of white burgundy. Paired with poached sole with a lemon / garlic / shallot / butter sauce. Haven’t had a ton of PYCM, and honestly wouldn’t pay the $200+ for this bottle today. But quite enjoyable in a crazy sort of linear precision way. Doesn’t really have all of the fat and richness I expected, but the mid-palette sort of takes your breath away with its gunflint character. Very long finish with some nice texture. Decanted for an hour which was a good call, quite reserved at first.
