Love these weird wines but rarely get to drink them. Perfect with vaucluse octopus--an amazing dish.

It's amazing how these wines seem to only get fresher w age. Toasted, doughy, smoke, dried tree fruit.

Mostly animal and kernel flavors at this point, but undeniably there is green apple and a floral component.
