Silver Oak
Napa Valley Cabernet Sauvignon
Needs about 40min to an hour to fully open up. Starts off Bordeaux-ish then finishes up like a Napa cab.

Opened up nice; so much so, tasted almost like a different wine and hour or so later... As I've written before about big Cabs in an Italian place... Would have been better with a Porterhouse, than my three dish pasta tasting menu... Look forward to drinking again.
