Very brett-y but fun fizz. Bold acidity and some nice saline and umami notes. Drinking with oysters, would be interested to see what it’s like in 3-4 years

The light fruity Pet Nat I expected but wasn’t craving. I’ve been struggling with this category lately. This is good but I want more bubbles and a crispier texture. A hazy pale yellow summer spritz - lemons, apples, pears.
