Imagine this.... A glass of Margaret River Cabernet Merlot with beef short ribs, treacle glaze, celeriac and mushrooms 🤤

This delightful combo is June’s wine and recipe match from Wine Selectors 2019 Calendar Collection ($195 for 12 bottles of wine + 12 recipes from Australian chefs and a drool worthy 2019 calendar 🙌). This recipe is from Chef Santiago Fernandez.

The wine in question is the Voyager Estate ‘Grit by Sea’ 2014 Cabernet Merlot from WA’s Margaret River region. This $28 60/40 blend (60% Cab Sauv, 40% Merlot) has been given 92 points from Halliday.

I found it a garnet shade in the glass. Notes of black and blue berries alongside pomegranate and savoury aromatic cedar rise from the glass. There’s black and red currant acidity on the palate with smooth vanilla notes, mouth puckering tannins and a juicy finish. I can definitely taste why this would be a great match for the beef short ribs 😋
