Asolo is best known as one of only two DOCG areas for Prosecco but they make some interesting red wines there like this totally pleasant, easy to drink and enjoy lighter bodied wines. Medium minus tannin, medium plus acidity and lovely red fruit character - sour cherry, red cherry, wild strawberry, red plum, a touch of dried herbs, cassis, violet, black cherry and more. Rewarding blend of merlot, cab Sauvignon, cab franc, and the rare Veneto variety recontino. 13% abv. A very pleasant discovery. — a year ago

Could technically qualify as a pet-nat as it only undergoes a single fermentation and is bottled “col fondo” with sediment. Paired with fried cannellini beans and fried kale (Prosecco tempura batter) with parsley, parm, and lemon. Nice dry, acidic cut to slice through the crispy fry. From the Asolo DOCG.
