Kings & Spies Cider

Pale golden white. Short brief head in pour, moderate carbonation with medium sized bubbles. Label says it’s part of Heirloom Series, 8% alcohol. Pleasant perfumed apple aromas in nose. Expected McIntosh flavor profile in mouth but much more subtle and complex than that. Ever so slightly off dry, slight astringency in finish so very gently pressed. Slight malic snap in finish. As I continue my never-ending and tireless search for the perfect “10” of IPAs a friend recommended that I try this one. The “Filthy Dirty” IPA from Parallel 49 Brewing Company, Vancouver BC, although not the perfect “10” it certainly ranks in the top tier of great IPAs. With its crisp mouth feel, hints of fruit and clean clarity on your palate this Canadian is a hops lover’s delight. Oh with so many great IPAs to taste and so little time, I need help. 2018 vintage.
Crisp, fresh, mixed apple and pear with lime skin aromas.
A round mouth feel with yellow fruit, Asian apple, grapefruit and ginger with a leesy and citrus finish.
A nice job balancing between roundness and acidity.
Grilled BC Halibut or roasted Sablefish would be sublime.
