Very pale Provence-style rosé from old Garnacha vines in Gredos, one of the hottest regions for Garnacha in Spain. Vineyards are planted on granite and sandy soils, at over at 2,500 ft. in the village of Cebreros (which lends its name to the newly-established Cebreros appellation, where Soto Manrique is emerging as a key player). Fermented in concrete vats, with no skin contact, blanc-de-noir style. Lean, light-bodied, with subtle aromas of red fruit, strawberry, cherry and herbs. Zesty acidity. — 4 years ago
