Initially– strong tannins, dark fruit, and heavy. Medium to long finish.
With food (fat and acid) the tannins really balanced out, and became more light bodied for great drink ability with food.
Over time, tannins mellow out in the forefront, but maintain a good presence on the backend. Fruit flavors become more prominent. With an interesting pungent after taste.
However, a small window for great drinkability, before becoming a bit too light.

🇦🇷 Cabernet Sauvignon🍷 from Argentina. Full body, aged in oak barrels, dry and somewhat smooth to the palate with taste of chocolate 🍫 and cherry 🍒. The tag on the bottle gave it a rating of 92. I wasn’t impressed at first but once breathing this wine evolved into something very good.. I would pair it with sweet and sour pork 🐷 although it is a red varietal. 13.5 % ABV. — 4 years ago
