Assemblage is an unusual Naraman made by blending seven vintages of Junmai Daiginjo, 2018–2024, each matured under low-temperature storage. The intent is to combine the depth that comes with maturation with the freshness and elegance of younger sake rather than producing a conventionally heavy koshu. The result is described as layered and rich while retaining balance and a relatively light, refined character.
SMV, acidity and amino acid are not disclosed by the brewery for this Assemblage, so I’m leaving them out rather than using figures from the regular Naraman Junmai Daiginjo. This was nice.
Tasted at Sake Day SF — 9/26/2026. Rating is limited since the same glass was reused throughout the tasting, making it difficult to get a truly clean tasting and accurate read on the aromas. — 11 days ago
