He is the only producer in Sancerre making truly natural wine. He farms horse and plow, totally organic. His wines are all aged in barrel, some quite large and very old, with the exception of quaterons which is tank. The wines usually see no so2, and there is never skin contact. His wines, being farmed the way the are, usually are picked at higher brix, with a little botrytis, and with barrel aging tend to build quite an opulent quality. I have tasted a couple of his wines that are nearly 16 percent alc and totally dry with crazy botrytis and somehow remain very fresh and long. The wines are very intriguing. There is evidence that would suggest his style is actually just old school. Prior to the 1980's more sancerre was farmed horse and plow and picked later.
