Wine 2 in Matt's Santorini tasting. Has very very clean steely character that leaves my mouth with a metal taste afterwards. Very pure and a good example, but would be difficult to drink a whole bottle.

This wine is extremely well made. I would like to try it in 5 years too because there is a lot of nuance behind its acid core. But a touch of French oak makes it delicious now.

Opens 1 hour ahead, with out decanting. Mineral, salinity and if you evaaa visited the volcano in Santorini you can smell it in the glass. Well balanced with just a touch of citrus. It's here to stay, I'll say at least 15-20 years.
