Vintage 2020 | Nykteri is the word for ‘staying up whole night’ in the local language. Santorini vintners harvest in the morning and press the grapes during night. Made of Assyrtiko, Athiri and Aidani grapes. Absolute very mineral. Very compelling wine that matured in barrels for three months. We drank it with shrimps dim sum and it made us happy. — 6 days ago

Lively citrus , lemon, lime, grapefruit wrapped around subtle notes of dried apple, pear, quince, and a delicate floral lift.
On the palate:
Crisp acidity and focused structure define the experience. The mid-palate is clean and direct, leading to a short yet precise finish, marked by an unmistakable saline edge and crushed stone minerality that echoes wet pebbles, oyster shells, and volcanic ash.
Mouthfeel:
Medium-plus dry, with a medium to full body and a lingering impression of sea breeze and stone.
A truly refreshing summer white that punches well above its price point. Perfect with oysters, shellfish, grilled octopus, or simply on its own with a sea view (or dreaming of one).
