The 2007 Brut Rosé Cuvée Elisabeth Salmon is even better than the last time I tasted it. A total pleasure bomb, the 2007 drinks well right out of the gate. Soft curves push a core of sweet red berry fruit, rose petal and cinnamon into the foreground. Readers will have a very hard time keeping their hands off the 2007. Why wait? Normally, we are just fine with their N/V Rosé Champagne. Thought it was time to switch it up and pull out a bottle of vintage.

The nose reveals; blood orange, tangerine, pink rose petal infused strawberries, pink grapefruit w/ a dash of sugar, rhubarb, under ripened watermelon, Rainier cherries, apricots, peach, hints of black cherries, touch of oyster shell, saline, sea fossils, grey volcanics, some white spice, crumbled, dry chalk, hints of bread dough, yeasty notes & baguette crust/toast, coriander, fruit blossoms, peach colored lilies, orchids in a field of wild flowers.

The mousse is extremely delicate with micro-oxygenation. Caresses the palate like a feather duster. Blood orange, tangerine, pink rose petal infused strawberries, pink grapefruit w/ a dash of sugar, rhubarb, under ripened watermelon, Rainier cherries, apricots, yellow peach, hints of black cherries, marmalade fruit pieces, touch of oyster shell, saline, sea fossils, palate gripping fine grain grey volcanics, limestone minerals, pronounced white spice with gentle yet punctuating heat, vanillin, crumbled, dry chalk, hints of bread dough, yeasty notes & baguette crust/toast, coriander, fruit blossoms, peach colored lilies, orchids in a field of wild flowers. The acidity is beautiful...near perfect. The finish is; elegant, very refined, well knitted and balanced in fruit & earth and persists endlessly with just the right level of white spice. Excellent.

Lots of fun bottles were popped at Al’s hosting this past weekend for his birthday celebration. All were served blind. 1 sparkler, 2 whites, 6 reds and 1 dessert wine.

I’ve now had this twice in the last month. Lucky me. First time was at the Billecart tasting, and they spoke very highly of this (as they should). This was served a little warmer than I enjoy my champagnes so it was hard to enjoy the crispness or the mousse, but there was a gorgeous layer of bright yet restrained red fruits like rhubarb and strawberry cream. Even some kiwi and dragon fruit. Hardly any yeast. But even at a warmer temp, this stayed in balance. I called this mid 2000s rosé champagne and guessed it was the Billecart Cuvee Elizabeth, but I had some help from others as we brainstormed. Partial credit!

I always struggle with rose champagnes. Somehow they don't convince me and almost never justify the price tag. But there are a few which I am satisfied with.

Cuvee Elisabeth is definitely in my top list. Its first vintage is 1988 and was created as a counterpart to another prestige cuvee of the house Nicolas François.

This cuvee is about the elegance and finesse rather than the power. Made of equal parts of Chardonnay and Pinot Noir it is blended with less than 10% of red wine from old vines in Mareuil-sur-Aÿ.

Chic rose color with copper hue. Reductive style with a cooler 2007 vintage showing through. Apricot jam, candied citrus, sugar powdered red berries. Delicate bitter cool and dry finish. Disg. in Feb 2019 after spending impressive 11 years on lees. The dosage of 6 g/l is enough to reach the perfect balance.

Chewy and intense. Definitely a bit more punch. I liked it as a departure and my first of six. I think I will wait on the next one and see how this ages. I suspect a very good champagne now will mellow and become even better in a few years. Definitely looking forward to the next one.
