Hunter Valley Sémillon



My first Australian Semillon. 11% ABV. Extremely temperature sensitive, notes are very light and delicate, better on the warmer side of slightly chilled. Dry and crisp, lemon upfront and dry lime in the finish, slight waxy/lanolin notes when temp is right, quick glimpse of apple blossom in the nose at one point. Possibly could be more phenolic-ly impressive in an off-dry style. Would like to see an aged example, where honey and nut notes have developed. Has anyone aged this wine under Stelvin before?
