This is a wine you want to sip and watch evolve. It starts to drink like a deep Cab, but just as that leathery flavor kicks in it does a rapid acidic u-turn. Give it an hour to breathe and you’ll be rewarded with eucalyptus and herbs. Can’t wait to sip later tonight to see what Day 2 tastes like!
