Throwback to some Christmas bubbles and catching up on notes. This amazing cava's in-bottle fermentation happened with rosemary honey! I wouldn't have guessed, but there are beautiful and complex flavors of honey along with green apple and pastry and minerals. Was awesome to share such a great chambers street find over the holidays.

Silky on the tongue, slightly savory with nutty notes. A must try!
