Château Haut-Bailly
Pessac-Léognan Grand Cru Classé Red Bordeaux Blend
Haut-Bailly Dinner in SF with Veronique Sanders of Haut-Bailly.
The 2000 is delicious but, it still proves out my thoughts that 2000 is a stubborn vintage. It’s going to be 25 years plus in bottle from vintage before this and many other 2000’s show their full beauty & elegance.
It’s starting to show nice integration, elegance & beauty. But, there are better days ahead. Round, ripe, slightly stewed fruits of; blackberries, black raspberries, dark cherries, black plum, mint, loamy soil & clay, dry stone, tobacco, leather, black earth, granite and red, dark, blue flowers. Great round acidity. It’s well balanced, delicious with a finish that persists minutes.
Served with Creek Stone Farm Filet of Beef, Sautéed Potatoes, Red Wine Sauce. @Mathilde French Bistro

Firing on all cylinders. Aged along gracefully. Really in a prime drinking window.

Aug 28th, 2018Rating would be better without the green bell pepper quality. Other than that, a beautiful wine.

Apr 26th, 2016Shows some toasty oak on nose. Slight walnut notes. Bright palate. Palate still is tight.

Dec 4th, 2015The youngest wine of the flight, and perhaps of the whole evening, this pure bred has so much in store for the future. It is composed of about half and half Cabernet Sauvignon and Merlot. It was elegant and understated, with stunning, pure cassis fruit and shimmering minerality. While not showing the generosity of the others, this has what only the real greats ever can hope for: concentration and depth without any hint of heaviness. I will return in another five years!!!!

Feb 26th, 2015Christmas day fire up with 49ers Santa and some snacks.
1 hour decant(decent chunky/fine sediment). A stunning dark ruby red color with some bricking. Nose: jumping from the glass are perfumed notes of dark plum/currants, cigar box, potting soil, smoke, touch of mint. Taste: lovely, smooth, balanced, savory wine with earth, leather, dark plum, cedar, little pepper, and a minerally dark chocolate medium plus dry finish. YUM!

Lovely wine. This was a wonderful mix of lush fruit with depth and length. Great value buy for Bordeaux in my opinion.

Jul 2nd, 2023Color is a dark ruby red; some bricking is apparent on the edges. The classic Bordeaux nose—sweet leathery, spice, stewed meat and green veggie with slight floral notes and cassis. Taste is a bit surprising; not as sweet as the nose, but a definite dark cherry flavor, cedar, spice with an abrupt tobacco and smoke medium finish. Tannins are pretty much resolved . This wine is medium bodied, soft but did not deliver what was expected for the 2000 year vintage. Could change as it opens up; decanted 1.5 hours. Maybe a few more years will bring out the flavors intended.

Dec 25th, 2020MERRY CHRISTMAS to All!
1.5 hour decant(decent chunky sediment). An inspiring dark ruby red color with some bricking. On the nose: kaboom!! That sweet aged Bordeaux perfume!! with red cherry, cassis, smoke, touch of green vegi(luv it), little mint, vanilla, and a whiff of barnyard leather. Taste: smooth medium body wine with cherry, tobacco, smoke, cedar, crushed rocks. Some still there slightly bitter tannins at the end....a perfectly fine wine, but not as great as this vintage would have you think it should be....will wait a few more years for next try.
