Graves Blanc White Bordeaux Blend
Nose has warmed pear, wildflower honey, dried grapefruit peel and cold butter.
Palate has baked yellow apple & pear, fading citrus notes, sandstone-like minerality, under-ripe white peach and hint of dried apricots on the long finish.
This wine has improved markedly in two years since from our last bottle. As usual, it's the last bottle, but should anyone be holding 2010, no concerns for 4-6 more years. Solid bottle from a very solid vintage, just coming into it's prime, when in proper storage.
Paired tonight with some beautiful cuts of Halibut, perfectly cooked in sous vide. Accompanied by roasted broccoli, shallots and lemons, just stellar with this bottle.
Decanted ~2hrs.

Pronounced aromas of bruised pear skin, smoke, crushed walnuts and musk melon. Silky and full on entry with moderate, well-integrated oak that gives way to a surprisingly racy, mineral finish. It's brighter than the nose belies, and nicely balanced. Fleshier notes subside to limestone and gravel intertwining lemon pith, the finish is actually quite mouthwatering. 13.5% ABV I Sample
