delicious bottle of wine. Amazing what Sauvignon can taste like when actually ripe and in capable hands. I marinated some chicken in gochujang, mirin, ginger, onion, and garlic. had a little mixed green salad with lemon-ginger dressing with avocado and some gochujang and cane sugar vinegar slaw. Knockout pairing.

Apr 23rd, 2016All the delicious acid you would expect, but some time on lees balanced that out with some sweetness. Enjoyed this- paired well with raw rockfish and rockfish pâté.

Wow creamy citrus. Sauvignon blanc whaaaat? Where's the grass? Surprising, but still with good acidity- not your average bear.
