Disturbed that spare vegetative nose, and a flavor to it. However, I had made a seared, medium, rare, moose tenderloin, having on the salt and fresh black pepper with sprigs of thyme and butter. Eating that and then take a drink of this opened up everything. The lien mean spartan winds only become alive of flavors Herbs in the fat mixing in with the wine to make spiced fruit versus regular. Excellent structure and tendons that played well against the lean meat. Definitely goes well with venison, definitely goes well with medium rare game.
