Jul 22nd, 20152009 vintage served on 8/2/18 along with buffalo ribeye. Tannins smoothed our nicely. Still shows a bit of pepper and is slightly jammy. Nose has changed considerably from 3 years ago, leather rather than floral. Not completely off-putting but for sure more funk. Pairing real well with the bison I am serving.
