Of the 3 grand cru Chablis chez Raveneau, Valmur is my favorite. I find Blanchots less minerally, Valmur the most minerally, Clos just behind Valmur. The best ever for me, shockingly, is 1994 Valmur, then 1996. We had a stunning wine of the trip 2010 Valmur in Champagne at Les Crayeres.

So I was eager to drink 2002. Fabulous from the get go. Pop and pour, first w a pâté de campagne, then with roast duck and herb risotto at Opal in Santa Barbara. Waiter foolishly declined the proffered pour.

Just super citrus zest bejeweled with minerals and hints of menthol, super acidity, all balanced and long, depth and weight with no heaviness. Simply great Chablis. Loved it.

Color is still youthful. Nose is focused on mineral, sea shells, lemon peel and fresh squeezed lemon juice. Mineral and rich palate. Lots of crushed rocks with an unctuous side. Focused finish seems to just be showing a touch of maturity.

Wow. It's like a sea spray of white truffle and citrus. Nose has you swooning, palate is iodine and butter and citrus and wet stones. Blew us away and the whole tasting menu is composed with a wine of this profile foremost in mind.

2002 vintage. In Au Fil du Zinc, Chablis. Medium lemon green hue. Lemon curd and honey, some buttery notes. Rich. Deep concentration. On the palate, medium plus acidity, full body, medium alcohol, full concentration of honey, vanilla and lemon candy pieces. Wet stone minerality present in the mid palate, rather than the nose. Quite long, but not lingering in the way some Raveneau can be. Developing in the glass. Great complexity. Still relative youngster. Drink now until 2032. NB: decant at least one hour before drinking.
