Domaine La Colombe Raymond Paccot
Le Brez Chasselas
I love this grape and region. I can't visit Swiss family this summer, but this wine takes me there. Limestone, restrained acidity, yet expertly balanced. Maybe the best Chasselas I've tried. Relatively light, and meant for apéro or fish. I had it with sushi, then the rest of the bottle with goat cheese and herb ravioli, blistered tomatoes, capers and pesto sauce. Both were great pairings 🙌 12% abv.
