New world Chablis if there is such a thing. Big acidity but balanced. Lemon, lime and notes of white grapefruit. Purely mouthwatering.

Pale gold with green-gold highlights in the glass. Wildly aromatic; flinty pome fruit on the nose. Firm — but not austere — mouth-watering acidity introduces the palate of underripe pear, quince, and flinty chalk. Could probably last a good decade if well cared for, but it's where it should be now.
