Santorini Assyrtiko

So glad dungeness season is back in full swing, and what better wine to celebrate? Maybe some white Burg.

Took a day to open up. Day 3 it's singing. Live this wine, definitely one of my favorites.

I rated this wine previously when younger. It was summery, holiday, lemony. Today with 6 years of bottle age I can say assyrtiko is one of the great whites of the world. Minerally French meets dry stone fruit and gasoline German when years are added.
