Nice staple Chablis that checks all the boxes. Lively and fresh, plus minerality and a surprising amount of fruit. Paired well with chicken Saltimbocca.

Pale lemon Nose: peach, pear, fresh herbs (thyme?) Dry, medium acidity, medium alcohol, medium body. Light intensity. Flavors same as aromas, but with added minerality. Short finish. Balance is a bit off. Not our favorite Chablis. Drinking 2018 in early 2021, I wonder if cellaring for another year might relax it a little

Like Goldilocks, just the right amount of balance: stone, muted fruity citrus and a finish that’s smooth and silky with just a hint of bite. If this was any easier to drink you’d mistake for water..apply the brakes and sip slow to enjoy as it’s very easy to quaff!
