Nose of lemon meringue, brioche, yellow apple, and this funky, evolved note that I can't quite put a finger on. Some things that came to mind were meat broth, diesel fuel, and/or dried herbs.
Zingy lemon peel, white pepper, green apple, chalk. Lots of acidity, but still fairly soft finish. Very fine bubbles.
Tasty stuff with a very interesting nose. Great with soft, creamy cheese.
