This has a creamy and floral nose with wet hay and also some plantains. Palate is juicy and explosive with lovely fruit and sap. Really clear fruit and such an impressive wine. Great balance, freshness and purity. Best bottle of this so far.

My first and certainly not last Ayze. Red apple peel, biscuits, tangerine zest, freshly bloomed white and pink florals, minerality — there’s so much going on here. each time I went back to the glass I found something different.

Gringet! Love this nose. Hay, herbal, alpine, feral, piney, so different and invigorating. Superb alpine air minerality. Great purity and such clean mousse. Lovely sap and extract with terrific persistence on the finish. Very pure and very clean. Such a unique and delicious wine. Not much fruit which is a very good thing.

Nose is clean mountain air. Julie Andrews in sound of music clean. Lovely. Some floral elements. Mountain wildflowers ... let’s go with that to continue the metaphor.
Palate is fruity but not a known fruit. Meyer lemon is the closest but it’s not very sweet. Just a touch of RS to balance it out and add to the deliciousness. Good minerality. More on the spicy minerality side. Almost some sweet yeast.
Priced like crappy entry level champagne. Drinks like very good $60 champagne.
Not super fizzy. Which I like.

5 grams RS, 24 months aging. Mineral, iodine, pastry and baking spices, so so mineral, elegant and beautiful mouthfeel, complex and juicy, very pure, textured with wonderful acidity and freshness. Concentrated and so so deep. Sappy and structured with terrific fruit (lean green fruit) and brilliant minerality. Delicious and so so long. Balanced and so pure.

Lovely stuff—yeasty nose, palate has this utterly unique Asian pear/pine/orange blossom accord; clean & fresh, mineral, acid on point. Slightly bitter finish. Geeky & fun.
