It seems like in the Jura there is always a new treasure to be found. Especially for acidity-seekers. Francois Rousette is making topped-up wines around Château-Chalon since 2007, but it is the first time I came across them. This one is a persistant beauty with a powerful mineral backbone and razorblade acids. Liquid fossils. Wow!
