Great wine to experiment with. This is kombucha meets Etna Rosso. Fermentation takes place in the bottle, so there's lots of similarities to beer. A nice blend of indigenous Sicilian varietals in a sparkling rosé. Raspberry and wet leaves on the nose. The palate is spicy and funky. Earthy, mineral notes up front give way to crisp, tart raspberry and intense minerals on a mouth drying, lip smacking finish flush with acidity. This is good, however I prefer the Contadino.
