Mostly Pinot noir, this champagne was a beautiful light amber. Out of the bottle this was aromatically intense but tight, with fine and explosive (!) bubbles. Strawberries, cinnamon, lemon, crunchy red currants and pastries are tightly knit, and I was left with plenty of phenolic texture. An hour later the bubbles had subdued and this opened up to some softer fruit, but this wine will express more aroma and complexity probably 10 years out.

Bakery aromas and apple skins fill the glass. Brioche, apples and minerals all wrapped up in a ball of acidity in the mouth. Long clean aftertaste
