Cuatro Palmas Amontillado Jerez Palomino
58 year aged sherry. Unbelievable complexity. Salinity, mushroom, toasted hazelnuts, high acid and long finish.

So many things I could say about this #amontillado suffice it to say that this is one of those wines that you plan the food around the wine

Jun 1st, 2015Tasted at No 3, Friday 16th January 2015. Bottled from one of the four casks left, minimal filtration or clarification. This is a great Amontillado, deep, topaze colour. Profound and complex nose, rich with a hint of sweetness. This to me evokes my childhood and those evenings in the winter seating next to the fire place and eating some grilled chestnuts. A great old Sherry!

Jan 19th, 2015It is a good Wednesday that ends with a one cask run of a five cask solera. This is dry, penetrating, ancient Amontillado- the kind that Poe's Fortunado longed for. Hopefully I won't end up walled in!!!
