Easily the most wonderfully unique and complexly wild bottle of Champagne I’ve had. 100% Chardonnay from Clos Saint-Sophie aged in one 1986 Ganevat Vin Jaune barrel for 3 years, topped sometimes.
Curry, celery, coriander before citrus, stones, spice and chalk. Wow.
At once reductive and oxidative, yet is neither. It is fresh, complex and faceted with a “memory of oxidation”.

One more bottle to round off. Champagne! A Lassaigne cuvée that is inconnu? Open it up! The grapes that are harvested from Clos Sainte Sophie are aged either in an old Vin Jaune barrel from Ganevat, a barrel from Mâcon-Solutré or a barrel that used to age Cognac. Which one did we have @Théo Cauchois? @ Saturne
